You don't need bread when you can make these great substitute buns with chicken!

Whip up some of these quick buns and then all you need to do is think of all the creative things you can do with them! Make a burger, a sandwich, or maybe a pizza crust.

Ingredients
- About 1 pound cooked chicken (combo of light and dark meat is best, but you can use one and not the other. You may need less meat if it's just breast since it's drier)
- 4 eggs
- 1/2 tsp baking soda
- 1/2 tsp apple cider or white vinegar
- Salt to taste

Instructions
- Preheat oven to 350°.
- Add ingredients to blender, eggs first. Blend until smooth, stopping to stir the batter if needed.
- Fill a whoopie pan mold or use a spoon to make flat round disc shapes onto a parchment lined sheet pan. These will puff up a little bit, so make them a tiny bit flatter than you would like.
- Bake for 8-10 minutes.
- Let cool.
These freeze well too! Freeze them in single layer to keep separated then you can combine them in a bag to have ready.
