Keto-Taquitos


These just sound fun don't they? Just beef and cheese, these are super quick and simple to make, but a fun way to revisit a fun snack and add some crunchy cheese to your carnivore diet.


Directions:

You will need shredded beef and cheese. Cheddar, jack, or a Mexican cheese blend will all work. Heat a non-stick pan to medium. Make a small circle of shredded cheese on the pan, just thick enough to cover not leave many gaps, and make a line of the shredded beef down the middle.


Once the cheese has melted together and started to bubble, use a non-stick spatula to life up the side a little. If the cheese is cooked enough to hold together and look cooked on the bottom, but not quite crunchy yet, use the spatula to roll the side of the cheese "tortilla" around the beef, and immediately remove from the heat. The cheese will harden to a crunchy texture quickly as cools.

Copper or ceramic pans are a great option for non-stick pans since most others include Teflon, a highly toxic chemical that can leach into food. Even pans that advertise "No Teflon" can still include the same chemicals, since Teflon is actually just a trademarked name.

This is the one I use. I've had it for over a year and it remains completely non-stick with no scratches.
